Crisp Cucumber salad

Sometimes you want something really green! Or you're making a larger meal and really need something easy to prepare as a side but maybe you're tired of the typical Caesar salad or mixed spring greens. This is an easy to make refreshing recipe for a sweet, crisp and savory cucumber salad that takes almost no time at all to make and has incredible layered flavors. All you're gonna need is: -Cucumber/s (english cucumbers are my favorite, because you don't have to peel them, but you can use the usual kind just take care to peel the waxy bitter outside off before slicing them)

-seasoned rice vinegar

-sesame seed oil

-chili lime salt

-garlic powder -green onions (optional, for this version, I left them out)

When you've got your cucumbers (peeled if needed) slice them thin and evenly till you have enough to fill the bowl you're trying to use.

Put your cucumbers into the bowl. For this recipe I used one cucumber and a smaller bowl but it scales up really easily for however many people you're trying to make it for. The intention is essentially to speed pickle the cucumbers while leaving them nice and crisp to eat. Add about 1/4 cup seasoned rice vinegar, a teaspoon of the chili lime salt, a dash of garlic powder, and a tablespoon of sesame oil to cucumbers and mix thoroughly. If not all the cucumbers are getting decent coverage of the vinaigrette mix, add a little more rice vinegar, sesame oil and chili lime salt to taste. Allow to sit for about 10-15 minutes and chill. Serve promptly for crisp texture and rich flavor. You can also allow the cucumbers to further pickle, making them softer but much more savory.

This is a really good snack on a hot day and is also excellent as a side. Enjoy!
